This flour is a sifted and ground mixture between 60% wheat and 40% rye. The rye gives a nice character and the wheat flour gives good baking properties. Together, the mixture gets a light taste of rye that is perfect for a juicy rye loaf or a mild breakfast bread. The flour can be combined with Finmalt or Coarse Malt Rye Flour for a darker and coarser bread.
