Carbon offsetting for the months of April-August. We had 15 deliveries to offset for April until including August, each producing close to 2 tons of CO2 emissions, so we offset 30 tons on the 400MW Solar Power Project at Bhadla, Rajasthan, India. In addition, we are enrolled on a monthly subscription to remove 100 kg CO2 directly from the air with the Swiss company Climeworks.
Potatoes are the soul of Scandinavian cooking. They are eaten with almost every meal and accompany anything traditional. You would think that, given such culinary success, they have been with us for ages, but in fact, potatoes have been eaten in Scandinavia for only about 300 years...Did you know that a gentleman by the name Olaus Rudbeck is considered to be the first to bring the potatoes into Sweden.

Easter in Scandinavia is like in many other countries, a big celebration that includes the death and resurrection of Jesus but in Scandinavia there is also the Easter bunny, children dressed up as witches, schnapps, chocolates and candy. The most important part, however and the very centre of Easter in Scandinavia is definitely the food.

Our second month of Carbon offsetting! We had four deliveries to offset for February, each producing close to 2 tons of CO2 emissions, so we offset 8 tons on the Terraclear - Clean water access. January is the perfect time to try something new and although traditional resolutions often fail, it makes sense that in the new year we have the opportunity to wipe the slate clean and start being our healthiest selves. We already have Dry January, but another option to start 2022 in a healthy way is Veganuary. As you might have guessed, this includes eating more plants and reducing animal products during the first month of the year.
On Monday, the 13th of December we celebrate Luciadagen, St Lucy’s Day, a day mainly celebrated in Sweden, in Swedish-speaking areas of Finland and partly in Norway and Denmark. St Lucy’s Day commemorates Lucia of Syracuse, an early-4th-century virgin martyr who according to legend brought food and aid to Christians hiding in the Roman catacombs.

Scandinavia paints the perfect picture of Christmas and spending Christmas here can be an incredible experience. Darkness, cold weather and traditions dating back to the old Viking days. What more could you ask for? But what exactly is a Scandinavian Christmas? While in many other countries gifts are opened on the morning of the 25th, a tradition that all Scandinavian countries share is the one of opening Christmas gifts early, on the evening of the 24th to be exact. The reason for this and for many other Scandinavian traditions can be found in the heritage from the Vikings.

The Christmas ham is definitely the star on most Swedish Christmas tables. Julskinkan is what distinguishes the smorgasbord from other holidays. At Christmas, Midsummer and Easter herring, salmon, meatballs, sausages and potatoes are served. At Easter the eggs are in focus, at Midsummer strawberry cake plays a big role but at Christmas it is the Christmas ham that gets to be the center of attention. But how did the Christmas ham come to be the star it is today?

Our beloved pepparkaka (gingerbread) is a very old and popular tradition around Christmas time. Although the gingerbread is eaten all year round, it is strongly associated with Christmas and has its own day on December 9th.The gingerbread is a thin, crispy cake that gets its unique taste from spices such as ginger, cloves and cinnamon and is one of our oldest known pastries.

Beer and nubbe are given products for the Swedish Christmas table and come in all sorts, brands, shapes and sizes, but when it comes to what soda to drink, the Swedes are extremely adamant. It must (pun intended) be Julmust! No other soft drink can compete. Every Christmas, Swedes drink almost 40 million liters of this dark, tasty soft drink.
“Kanelbullens dag”, The cinnamon bun's very own day falls on October 4th every year. It is an annual theme day established by the Swedish Home Baking Council in 1999 in connection with their 40th anniversary. The purpose of the day was from the beginning to get people to bake more home-baked, as well as increase sales of flour, yeast and margarine but today it has grown to become an important day in the Swedish calendar and the most famous of all the food based theme days we have here in Sweden.
Once upon a time there was a Norwegian colonial merchant's son named Johan Throne Holst. At the end of the 19th century, he bought the then worn-out chocolate factory for SEK 9,000 and turned it into a modern workplace, which soon became the country's leading chocolate manufacturer, and the chocolate brand Freia was born. In the 1920's Freia owned 50% of the Norwegian market.
"Ring Ring" was ABBA's debut album released in 1973 which included a long list of massive hits, but the phenomenal song that introduced them to the world was the song "Waterloo", which they performed on April 6, 1974 at Eurovision Song Contest in Brighton. The song won them the contest and it was the very first time for a Scandinavian country to win the contest as well.
