Friday I tasted the best roasted chicken ever ! I'm drooling now when I think about that chicken! 🤤🤭🐔

It was a long time ago I cooked a whole chicken, as I often thought it was too dry! 😉But now I will definitely do it soon again! 💯

I got the chicken fresh frozen from @swedishness.ch and it comes from @vikingfagel in the south part of Sweden. The chickens roam freely (18kg of chicken per m2, compared to EU law 42kg/m2), the feed is homemade (corn and grass), no additives and absolutely no antibiotics, the chicken lives longer and less stressed as they are slaughtered on the farm. So truly a happy chicken! 😊

Easy to do also, I just put spices, evoo and herbs into the chicken, then I brushed the bird with evoo and added spices. Then I cooked it 30 minutes in the oven (225°) to get it crispy (I used a Le Creuset skillet). During the time I heated up 5 dl white wine and 5 dl water, added a good veggie stock and more herbs (Rosemary and Thyme), added that to the chicken together with lots of pearl onions and garlic cloves. Then it cooked around 2 hours in the oven at 180°. Every 20 minutes I poured some of the jus over the bird. I let it rest 20 min before serving. It was a big chicken, 2.3 kg. 🤩😅

I served it with mashed potatoes, a vegetable tian (slices of eggplant, tomatoes and zucchini), the delicious onions/cloves cooked with the chicken and a good sauce! 🤤

The sauce I made from the cooking liquid, filtered, and I added some veal broth. So tasty! 😍
