Norwegian cod, known locally as "skrei," has been a staple in Scandinavian cuisine for centuries. It's not just celebrated for its delicate flavor but also its cultural significance. Every year, the Norwegians celebrate the cod season with "Skreifest," a festival that honors the migratory journey of the cod from the Barents Sea to the Northern Norwegian coast. Cook this delicious cod and pair ir with golden crisped potato cubes for a complete gastronomic delight.
Ingredients :
Norwegian cod loin fillets (around 150g each)
150ml dry white wine
2 garlic cloves, finely minced
1 tbsp fresh dill, finely chopped
1 tbsp fresh parsley, finely chopped
1 tbsp fresh chives, finely chopped
Salt and freshly ground black pepper, to taste
2 tbsp olive oil
Zest and juice of half a lemon
A dash of red chilli flakes (optional)
For the Potatoes:
10-12 fresh asparagus spears
2 tbsp butter
2 garlic cloves, minced
Salt and freshly ground black pepper, to taste
Instructions:
1. Season the cod loin fillets with salt, pepper, and a bit of lemon zest.
2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
3. Gently place the cod fillets in the skillet. Cook for about 2 minutes on each side or until lightly golden.
4. Pour in the white wine and sprinkle the dill, parsley, chives, and red chili flakes (if using). Let it simmer for 5-7 minutes or until the wine has reduced by half and the cod is cooked through.
5. Finish with a squeeze of lemon juice and adjust seasoning if necessary.
Place the herb-infused Norwegian cod loin at the center of the plate, drizzled with the white wine reduction and sprinkle some red chilli flakes. To its side, stack some golden oven-roasted potato cubes.
