Saffron Waffles with Cream and Cloudberry Jam

Makes: 10 pieces / Time: 45 minutes

Saffron Waffles
• 2 packets of saffron
• 8 dl milk
• 5 dl wheat flour
• 1 1/2 tsp salt
• 2 tsp baking powder
• 4 eggs
• 75 g butter

For Serving
• 2 dl whipped cream
• Cloudberry jam


Instructions:

1. Waffles: Heat the saffron together with the milk and let it cool.


2. Mix the flour, salt, baking powder, and half of the saffron milk to form a smooth batter. Add the remaining milk and eggs.


3. Melt the butter and mix about 2/3 of it into the batter. Let the batter rest for 20–30 minutes.


4. Preheat the waffle iron, brush it with melted butter, and cook the waffles until golden. Serve the waffles with whipped cream and cloudberry jam.
