With or without pea soup, pancakes is one of the most loved dishes in all of Sweden. The basic recipe for traditionally Swedish, thin pancakes is made by mixing milk and eggs with flour and a pinch of salt to a smooth batter. The secret to getting really even and delicious Swedish pancakes is to let the batter rest before frying them. Why not try our recipe and make some delicious pancakes today already? No need to wait for Thursday.
All you need for 6-7 pancakes is:
2 eggs, 3 dl milk, 1.5 dl wheat flour, 0.5 tsp salt, 1 tsp caster sugar (optional), 2 tbsp melted butter.
Then you simply just:
1. Whisk eggs and milk together in a bowl.
2. Stir in wheat flour, salt, (sugar) and melted butter.
3. Whisk everything into a loose batter.
4. Let it rest for 1 hour in the fridge (so the liquid can bond with the flour).
5. Melt butter in a frying pan, pour in 1–2 dl of pancake batter and fry the pancakes until golden on both sides.
6. Serve with delicious jams.
