Citrus-Marinated Cod

Ingredients

For the Cod:

  • 500 g cod fillet (fresh or defrosted, skin removed)
  • 2 tbsp coarse sea salt
  • 2 tsp raw sugar (råsocker)
  • 1 lemon (zest and juice)
  • 1 thumb-sized piece of ginger (peeled and grated)

For Garnish:

  • Grated lemon zest
  • Flaky sea salt (flingsalt)

Instructions

  • Prepare the Fish:
    Place the cod fillet on a sheet of baking paper.
    Sprinkle the coarse salt and sugar evenly over the fish.
    Citrus and Ginger:
  • Wash the lemon thoroughly and grate the zest.
    Peel and finely grate the ginger.
    Squeeze the lemon juice over the cod and sprinkle the zest and grated ginger evenly on top.

  • Wrap and Marinate:
    Wrap the cod tightly in the baking paper and place it in the fridge.
    Let it marinate for 6-8 hours, or overnight, to absorb the flavors.

  • Slice and Serve:
    Before serving, scrape off the ginger and lemon zest from the fish.
    Slice the cod into thin pieces.
    Arrange the slices on a plate and garnish with freshly grated lemon zest and a pinch of flaky sea salt.

  • Serving Suggestion:
    Serve as part of your holiday julbord with crisp bread or crackers for a delightful combination of flavors and textures.
