Kanelbullens dag (the Day of the Cinnamon Bun) is getting closer! It's one of our favourite Swedish "holidays" and this year we are baking our very own fluffy and delicious cinnamon buns to celebrate the day in style.  

All you need is: 150 g butter, 5 dl milk, 50 g fresh yeast, 1 dl sugar or white baking syrup, 0.5 tsp salt, 2 tsp ground cardamom, 15 dl wheat flour.

Filling: 150 g butter, 1 dl sugar, 2 tbsp cinnamon

Finish: 1 egg, pearl sugar

1. Heat the milk to 37°C (finger warm).

2. Crumble the yeast into a 3-4 l dough bowl. Pour over the milk and stir. Add room temperature butter in pieces, sugar/syrup, salt and cardamom.

3. Measure out the flour. Pour it airily directly from the bag into a litre measure cup. Do not shake the measure. Add the flour but save ½ dl for baking.

4. Work the dough vigorously, about 5 minutes by machine or 10 minutes by hand, until it feels smooth.

5. Let the dough rise covered with a tea towel for about 30 minutes.

6. Work the dough down with a machine or knead it lightly on a floured board.

7. Divide the dough into 4 parts. Roll out each part into an oblong cake.

8. Mix the ingredients for the filling of your choice and spread a thin layer on the cake. Roll up into a roll.

9. Cut the roll into ca ten parts. Sprinkle pearl sugar on top of each bun and place them in paper forms or on a tray covered with a baking sheet.

10. Leave to rise under a tea towel for about 40 minutes. 

11. Heat the oven to 225-250°C. Brush with egg and then bake the buns in the middle of the oven for 5-10 minutes.

12. Enjoy your very own Swedish cinnamon buns!
