Danish rye bread is a very popular bread that is dark, juicy, flavourful and packed with healthy ingredients. It's perfect for breakfast or as a base for the Danish delicacy smørrebrød. This yummy bread takes some time to bake but it is definitely worth it!
All you need is: 2 dl crushed rye, 10 g of yeast, 3 1/2 dl cold water, 1 dl beer, 1 1/2 tsp salt, 2 dl flax seeds, 1 dl sunflower seeds, 1 dl sesame seeds, 2 1/2 dl wheat flour, 2 1/2 dl rye flour.
1. Place the rye in a bowl and fill with cold water to cover, cover with plastic wrap and let stand for 8 hours.
2. Pour off the rye. Crumble the yeast in a dough machine bowl and whisk in water and beer. Add the rye and other ingredients and let the machine run for 10 minutes.
3. Place the dough (it should still be a bit loose) in a greased loaf pan that holds about 1 1/2 liters (for 1 loaf). Cover with plastic film and refrigerate for 12-24 hours.
4. Set the oven to 175°C.
5. Bake in the lower part of the oven for 1 1/2 hours. Take out and let cool on a wire rack.
6. Enjoy your delicious Danish rye bread.
